Tasting Note :
This comes from 50-year-old Grand Cru vineyards in Chambertin that completed the process of conversion to 100% certified organic by EcoCert in 2013. Fermentation is completed entirely with native yeast and the wine is aged for 15-18 months in 100% new French oak. Fourth generation Chantal Tortochet took over for her retired father Gabriel in 1996 (Domaine Tortochot dates back to the end of the 19th century). It has been under her leadership that the Domaine has updated the vineyards and restored the winery, as well as pursued conversion of the vineyards to organic viticulture. She has 10 ha of vineyards in Gevrey Chambertin, three of which are Grand Cru, including a holding in Clos de Vougoet.
